Turkey Meatballs

Total Time: 40 Minutes

Servings: 12 Servings (4 meatballs per serving)

Ingredients:

  • 2 pounds lean ground turkey

  • 1/2 cup unseasoned breadcrumbs

  • 1/2 cup carrots, chopped

  • 1 onion, chopped

  • 3 garlic cloves, chopped

  • 2 eggs

  • 1/2 tablespoon salt

  • 1/2 tablespoon oregano

  • 1 tablespoon garlic powder

  • 1/4 tablespoon pepper

Directions:

  • Finely mince carrots and onion by hand or in a food processor

  • Combine the ingredients in a bowl

  • Shape meatballs into 2-tablespoon-sized-balls and place on a baking sheet covered in tin foil

  • Bake for 30 minutes at 350 degrees or until they are lightly browned and cooked all the way through

  • Serve immediately or freeze in a plastic bag in freezer for up to 3 months
