  • 2-3 cups of spinach

  • 1 orange pepper, chopped

  • 1 red pepper, chopped

  • 1 cucumber, chopped

  • 1/2 cup mushrooms, sliced

  • 2 stalks celery, chopped

  • 1 cup quinoa (prep ahead)

  • Handful of pumpkin seeds

  • Handful of pine nuts

  • 2 Tablespoons Hemp seeds


2 tablespoons Olive oil

1 tablespoon apple cider vinegar

1/2 teaspoon sea salt, pepper, and garlic



  • Slice the peppers, cucumber, mushrooms, and celery (slice the veggies ahead of time to use during the week)

  • Lay the greens on the bottom of the bowl

  • Add the vegetables, pumpkin seeds, pine nuts, hemp seeds, and quinoa

  • Add the dressing and toss together


  • Whisk together the olive oil, apple cider vinegar, sea salt, pepper, and garlic

  • Add additional seasoning to taste


  • Add in chick peas, kidney beans, white northern beans, and sliced avocado

  • Prep the quinoa ahead

  • Chop the veggies and place in tupperware to use throughout the week

  • Whisk a large batch of dressing together and leave in fridge for the week

  • Can add any veggies to this!
