Roasted Sweet Potatoes and Carrots

Total Time: 45-50 Minutes

Servings: 8 Servings

Ingredients:

  • 8 medium carrots

  • 4 sweet potatoes

  • 2 sweet onions

  • 3 Tablespoons of extra-virgin olive oil

  • 1 freshly squeezed orange

  • ½ a freshly squeezed lemon

  • 1 tablespoon organic raw honey

  • 1 teaspoon of cinnamon

  • 1 tablespoon of oregano

  • 1 tablespoon of dried thyme

  • 1 teaspoon of sea salt and pepper

Directions:

  • Preheat oven to 400 Degrees Fahrenheit

  • Peel the carrots and sweet potatoes

  • Chop the carrots, sweet potatoes, and onions into even small chunks

  • Toss the carrots, sweet potatoes, and onions with the olive oil, orange juice, lemon juice, honey, cinnamon, oregano, thyme, sea salt, and pepper

  • Roast for 45 minutes or until vegetables are tender and brown

  • Serve and sprinkle a dash of cinnamon on top

Notes:

  • Can add raisins or dates to the recipe for additional sweetness!
