Lemon Herb Roasted Chicken

Total Time: 1 Hour, 15 Minutes

Servings: 4-6 Servings


  • 4 lbs (About 8 pieces) chicken breast- skin on

  • 1 Onion - cut in large chunks

  • 1/3 cup Extra Virgin Olive Oil

  • 2 lemons, 1 sliced, 1 juiced

  • 4 garlic cloves, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic seasoning

  • Sea salt and pepper to taste


  • In a separate small bowl, whisk together the olive oil, minced garlic, garlic seasoning, oregano,rosemary, thyme, sea salt, pepper, and juice from one lemon

  • Pour the mixture evenly over the chicken

  • Place the chicken on a baking pan with lined tin foil (skin side up)

  • Slice the other lemon and place thin pieces on the chickens evenly

  • Bake for 1 hour until chicken is fully cooked and slightly browned, flipping halfway through (take a spoon and scatter the juices on the chicken pieces when you flip the chicken

  • Remove from oven, cover with foil for 10 minutes and serve


  • If you have time, let the chicken marinade in the refrigerator for an hour to bring out the flavors

  • Add Fresh Rosemary for garnish

  • Add vegetables and sweet potatoes with the chicken for an all-in one meal!
