Creamy Green Spring Vegetable Soup

Servings: 8 Servings

Ingredients:

  • 1 leek or onion

  • 4 garlic cloves, roughly chopped

  • 2 stalks celery, roughly chopped

  • 1 large head broccoli, finely chopped

  • 2 cups, frozen peas

  • 2 big handfuls of baby spinach

  • Half a stalk of asparagus

  • Handful of fresh parsley

  • Handful of fresh mint

  • 1 lemon, freshly squeezed

  • 1 large avocado, chopped

  • 4 cups water

  • 2 tablespoons Sea Salt (or to taste)

  • 1 tablespoon pepper (or to taste)

  • 2 tablespoons Coconut oil or Ghee

Directions:

  • Preheat a large saucepan over low-medium heat

  • Add the oil/ghee and leek and garlic,stir until translucent

  • Add remaining vegetables and herbs

  • Season well and cook for 10 minutes on low heat

  • Pour in the water and stir well

  • Reduce the heat to simmer and cook for 5 minutes

  • Set aside to cool slightly. Blend until smooth with hand-held immersion stick or blender

  • Add in the avocado and blend until mixed together

Notes:

  • Sprinkle nuts or seeds of your choice on top
