Lentil Sweet Potato Carrot Stew

Servings: 6 Servings


  • 2 tablespoons coconut oil

  • 1 sweet onion, diced

  • 2 cloves garlic, minced

  • 2 cups green lentils, rinsed

  • 1 large sweet potato or 2 small sweet potatoes, peeled and cubed

  • 3 carrots, chopped

  • 6 cups water or low sodium vegetable stock

  • 2 bay leaves

  • 1/2 tsp. turmeric

  • 1/2 tsp. cumin

  • Sea salt and black pepper to taste

  • Fresh parsley, as garnish


  • Dice the onions and mince the garlic

  • Peel and cube the sweet potatoes, chop the carrots

  • Add coconut oil, onion, garlic, sea salt, pepper, turmeric, and cumin to large pot and saute on medium high heat until translucent

  • Add in the water, sweet potatoes, carrots, lentils, and bay leaves

  • Turn the heat up to high and bring everything to a boil

  • Once it starts boiling, turn the heat down to a low simmer and cook uncovered for about 20 to 30 minutes, until lentils are cooked through

  • Add in additional sea salt and pepper to taste

  • Remove the stew from heat and stir. Top with fresh parsley


  • Add in kale for extra greens
